FRESH BLUEBERRY CHEESECAKE WITH HOMEMADE CRUST

This cheesecake contains a lemon blueberry taste that is thick, smooth, and full of tangy lemon and blueberries. It is a dessert that is wrapped in a crumb crust and finished off with a blueberry sauce. 

First up there's the filling. The lemon base of this Lemon Blueberry Cheesecake is the best kind of lemon cheesecake base I have ever created. If you have made my lemon curd, note that it was made from egg yolks, not egg whites. I think this provides a better taste of lemon, so I used that concept in this cheesecake and substituted one of the eggs for egg yolks. This helped me amplify the lemon flavor, making this lemon's base to be the best!

 


 – TO PREPARE A GRAHAM CRACKER CRUST WITH NUTS, YOU'LL NEED:


 

• 1 Cup.Of graham cracker crumbs.

• 1/2 Cup.Of ground walnuts. 

• 1/2 Cup.Of old-fashioned oatmeal.

• 1/2 Cup.Of butter.

• 2 large Tbsp.Of brown sugar.


 – FOR THE CREAM CHEESE FILLING, YOU'LL NEED:


• 1/3 Cup.Of lemon juice. 

• 1 medium can.Of softened Cream cheese.

• 1 large can.Of sweetened condensed milk.

• 1 tsp.Of vanilla extract. 


 – INGREDIENTS FOR THE FRESH BLUEBERRY GARNISH:


• 2 Cups.Of fresh blueberries.

• 1/2 Cup.Of sugar.

• 1/2 Cup.Of water

• 2 large spoons.Of cornstarch. 

• 2 large spoons.Of lemon juice.

• 1/4 tsp.Of cinnamon.

• 1/4 tsp.Of nutmeg.


DIRECTIONS:


• HOW TO MAKE THE CRUST: 


1. Combine and press all the ingredients into a steamed baking bowl. 


2. Bake for 14 minutes in an oven preheated to 349 degrees. Remove and let it cool. 


• TO MAKE THE FILLING, YOU'LL NEED TO: 


1. Combine the ingredients and blend for 5 minutes. on high strength. 


2. Pour over the crust that's cooled. And let it cool.  


• HOW TO PREPARE THE BLUEBERRY GARNISH: 


1. Mix all ingredients except the lemon juice and carry to a simmer, stirring continuously. 


2. Cook until thickened for approx. 2 minutes. 


3. While cooking, add the lemon juice and keep it cold. 


4. While it has cooled, arrange the cheesecake.
